Lewisville, ID

Lewisville is a Jefferson County city in the Idaho Falls metropolitan area, established in 1882 on the eastern Idaho plain. Its defining modern industry arrived in 1960, when Idahoan Foods made Lewisville its corporate headquarters and built the city into a center for dehydrated potato products. The headquarters moved to Idaho Falls in 2011, while Idahoan’s main plant remained in Lewisville. The 2020 census counted 421 residents. Jefferson County School District 251 serves the area, with Lewisville students zoned to Midway Elementary in nearby Menan.

Potatoes give Lewisville a direct connection to the agricultural economy around Idaho Falls and the Snake River Plain. The Idahoan plant turns locally grown crops into packaged mashed potatoes, casseroles, and hash browns, keeping food processing visible in a city better known nationally through its product than its population. Lewisville’s streets remain those of a small eastern Idaho community, but the plant gives the place a distinct working role. It is a town where a local crop, a regional metro area, and a nationally recognized food brand meet in one industrial corridor.
